This recipe is a rather special one because I specifically created it for my very first cooking workshop that is happening in March with one of my favorite bloggers / people on earth (who by the way, unabashedly ate gummy egg free
sweet potato gnocchi with me during one of our trial runs).

Our
gnocchi dough was completely handmade from scratch, starting
with baking and mashing our own
sweet potatoes.
This looks delish, and I'd be tempted to try to make my own
gnocchi (though of course that makes it slightly less convenient)- I've seen lots of interesting
gnocchi recipes lately,
with ingredients like
sweet potato, spinach, ricotta and even eggplant!

In keeping
with the autumn orange theme I got the idea to try a
sweet potato gnocchi covered in gouda cheese sauce.
Most weeknights don't leave us
with the time or energy for something like
sweet potato gnocchi.
Gnocchi is considered a pasta, although it can be made
with a variety of ingredients: semolina or wheat flour,
potatoes,
sweet potatoes, spinach, ricotta, and even bread crumbs.

sweet potatoes... I think I may need to go eat some
sweet potatoes, because now I'm hungry!
