Basically when you use a spiralizer, you can replace your regular
pasta with more healthy, low - fat and low - calorie options like zucchini, beets,
sweet potatoes, butternut squash and carrots.
I never go all out carbo - loading
with pasta dinners or bagel breakfasts, but I do enjoy eating more
sweet potatoes and Japanese yams guilt - free.
So here we go
with today's recipe — vegan
pasta in a creamy
sweet potato sauce.
I actually just made this
with sweet potato spirals instead of
pasta and spicy daiya and it came out really great!
I bet it's really filling as well
with chickpeas,
sweet potato and
pasta in it.
Step 1: Cook
pasta according to package directions then drain Step 2: Steam apple dices until tender in a small saucepan
with a bit of water or in a glass dish in the microwave — for both methods, use just enough water to cover the apples Step 3: Mix the
pasta and the
sweet potato puree together then toss in the apple dices and mix again.
Think chickpeas,
sweet potato and mini
pasta shells, simmered in some tomatoes and stock and topped up
with some pesto.
The thick and hearty texture of the
sweet potato is amazing for blending into an incredibly smooth base that can be topped
with these savory herbs, which add a deep Italian - herb flavor reminiscent of your favorite cream
pastas — without all the heavy dairy products.
My salads have to be packed
with things like
pasta, baked
potatoes,
sweet potatoes, rice, corn, tempeh, brussels sprouts, chickpeas, cauliflower, roasted carrots, millet, wheat berries or quinoa....
So far, the ways I know of cooking meatballs are: Italian style (
with soffrito, tomato purée, beef stock, red wine, garlic, oregano and Parmesan, then served
with pasta, or courgetti if I'm feeling virtuous), Swedish style (in gravy
with Philadelphia Light mixed into it to make it creamy, then served
with mashed
potatoes and peas) or something I found on an American recipe site once which sounds vaguely Tex - Mex, although I gather from the measurements in your recipe that you're from the other side of the pond, so you'll probably raise an eyebrow at that (
with black beans, pinto beans, BBQ sauce, smoked paprika, chilli flakes and cheddar, then served
with sweet potato wedges).
It's time to fill at least one dinner next week
with sweet potato pasta that's all cozy in creamy almond butter sauce.
Gnocchi is considered a
pasta, although it can be made
with a variety of ingredients: semolina or wheat flour,
potatoes,
sweet potatoes, spinach, ricotta, and even bread crumbs.

I recently made a
sweet potato lasagna
with homemade buckwheat
pasta.
Spiralize your zucchini, carrot, beetroot or
sweet potato into «
pasta» and either eat
with a fresh veggie sauce or dip or toss into a salad
with your other veg.
So skip the
pasta this season, and instead carb - load
with the balanced, slow - burning fuel from a baked
sweet potato.
I recommend zucchini
pasta with fresh or organic marinara,
with a side of
sweet potato.
A few of my favorite simple, go - to recipes are soups, breakfast for dinner (scrambled veggies and eggs
with roasted
sweet potatoes, or a frittata), chicken and veggies thrown in the crock pot
with a favorite organic sauce, or cooked whole grain
pasta tossed
with roasted veggies, a can of rinsed and drained beans, and a splash of olive oil and sprinkle of sea salt.
For today's lunch, Matt and I made
sweet potato «fettuccine» topped
with leftover
pasta sauce, Tandur BBQ - spiced baked wild caught salmon, parmesan, and I'll have a bread stick as well.
