A fantastic spread atop toast, crackers, apple slices or whatever your fancy (
raw sweet potato rounds worked really well for me).
In this hearty roasted bowl we have: 1) Quinoa 2) Chili - lime kale 3) Garlic roasted broccoli 4) Curry
roasted sweet potato rounds, and 5) Roasted soy sauce and sriracha chickpeas.
You
bake sweet potato rounds until crispy, and then top them with shredded cheese, black beans, salsa, diced avocado, and fresh cilantro I have to introduce you to my favorite new thing I've been making for the past few months: SWEET POTATO NACHOS.
Sweet Potato Bites are simply
sliced sweet potato rounds, oiled up and baked at 425 ℉ for 20 minutes, flipped then baked for about 10 - 20 minutes more until golden brown and crispy (but still soft on the inside).
Place 2
sweet potato rounds (brushing with more miso dijon), pickles, sprouts, and pickled red onions on half of the sandwich, close it up, and enjoy!
Fry

Spread
the sweet potato rounds and onion wedges on a baking sheet, drizzle with 3 tablespoons of the oil, and season with salt and pepper.
Mash up a couple avocados with some salt, pepper, lime juice and a few tablespoons of homemade salsa (recipe below), then top
each sweet potato round with a dollop of guacamole and add a cilantro leaf for both flavor and presentation (total win!).
The roasted broccoli and
sweet potato rounds were delicious and healthy accompaniments to our dinner.
Let me tell ya, my guests really enjoyed munching away on
their sweet potato rounds topped with ity bitty pieces of candied pecans over the Thanksgiving weekend.

Arrange
