Have a bowl straight up the first day, make this incredible
breakfast bowl the next, then stuff a cup or two
in a
sweet potato for lunch and call it a day.
For example, instead of going straight from eating 1 cup of steel cut oatmeal with fruit (50 + grams of carbs) at
breakfast to eggs, spinach, and sugar - free bacon (< 5 grams), you could add
in sweet potato hash or fruit at
breakfast to meet somewhere
in the middle.
I'll often slow - cook
sweet potatoes overnight and top with leftover chicken or sausage
in the morning
for a super fast and nourishing
breakfast.
A few of my favorite simple, go - to recipes are soups,
breakfast for dinner (scrambled veggies and eggs with roasted
sweet potatoes, or a frittata), chicken and veggies thrown
in the crock pot with a favorite organic sauce, or cooked whole grain pasta tossed with roasted veggies, a can of rinsed and drained beans, and a splash of olive oil and sprinkle of sea salt.
While some prefer variety
in their diet, I could eat some form of
sweet potato every day: mashed
for breakfast, fried
for lunch, and stuffed
for dinner.

My husband loves
sweet potatoes, but was leery of having them
for breakfast, let alone
in a casserole.
For example, three meals
in a day could be: (1)
breakfast of quinoa porridge with greek yoghurt, coconut flakes and blueberries, (2) lunch of baked
sweet potato topped with spinach, tomato, roasted capsicum and grilled chicken, (3) dinner of a seared tuna steak with roasted carrots, broccoli and peas.
