If you are not a fan of
stuffing veggies into
sweets, then you should totally make this recipe because you are not even going to realize there is zucchini
in there.
My multiple experiments
in the kitchen to include as much
sweet potato as possible has led to one of my staple year - round dinners — the kale & white bean
stuffed sweet potato.
- Almonds are used
in both
sweet (dessert making) and savory dishes (thickeners for sauces, used
in stuffings for meats).
And while heavy comfort food is coming later next month for Thanksgiving, this
stuffed sweet potato is more like a transitionary dish instead of full comfort — it embraces the season but
in a lighter, brighter mode.
These uniquely shaped, golden - hued gems have been available at my local farmer's market, and
in my mind seemed to be the perfect candidate to saute and
stuff into a baked
sweet potato.
I've
stuffed the sushi with
sweet potato generously coated
in a miso marinate and added some raw cucumber slices for some freshness and extra crunch.
I usually use quinoa
in savory dishes like pesto quinoa
stuffed tomatoes, cilantro lime quinoa, or southwestern quinoa bowls, and this
sweeter summery version is just as delicious!
The chickpea protein burgers, which are full of good
stuff like chickpeas, quinoa,
sweet potato, oats and red pepper, and flavoured with Heather's own Montreal veggie seasoning (recipe also
in the book) and a generous dash of liquid smoke.
Much of it is loaded with sugar, and too much of the
sweet stuff actually contributes to the shrinkage of key brain areas involved
in mood regulation.

My thinkin is, if you're going to eat the

in many flavors, tofu, tempeh, seitan, nutritional yeast, lots of vegan sausages including some locally made Hungarian ones,
sweets packed to - go and two big shelves filled with gluten - free (glutenmentes)

stuff in bulk bins, etc..
Use them
in place of bell peppers
in the Cajun Holy Trinity (bell peppers, onion, celery), for smaller
stuffed peppers, for
sweeter sauces, soups, stews, and even steeping to flavor liquids.
The only snag
in this years stocking
stuffer plan, my mom no longer eats gluten or dairy — both of which run rampant
in these innocent looking
sweet morsels.
It is used to make

in salads, roasting and
