I make a similar meatless chili in a crockpot (I make a LOT at once and freeze for a quick lunch or dinner for 1 or 2)- and I think you'll like this idea: along with carrots, celery, onions and garlic, I usually use 3 - 4 cans of (low sodium, rinsed) beans (2 kidney, 1 each of another; I like black and small white or pink beans), 3 - 4 red / yellow / orange
sweet peppers (I but at the farmer's market when fresh and cut up and freeze the extras for making chili in the fall /
winter); 1 or 2 zucchini and / or yellow
squash, and (drum roll) 1 can of organic PUMPKIN PUREE!
Other great options are mashed
sweet potato, parsnip,
winter squash, and carrot (pumpkin and plantain have already been covered).
Use your favorite vegetables; any vegetable that will stand up to roasting, including onions, leeks, bell peppers, turnips, parsnips,
sweet potatoes, carrots, fennel,
winter squash, mushrooms, cauliflower, broccoli.
If you can't find
sweet dumpling
squashes, you can use any kind of
winter squash in this recipe (or try it with sugar or «cheese» pumpkin).

Two other popular
winter squashes include: spaghetti
squash, a small, watermelon - shaped variety with a golden - yellow, oval rind and a mild, nut - like flavor and butternut
squash with a soft inner flesh that tastes somewhat similar to
sweet potatoes.
The one change I might make (as I am on Weight Watchers) is to use
winter squash instead of the
sweet potato — but, honestly, this sounds yummy just the way it is.
Winter: For a creamier seasonal finish, substitute
sweet potatoes or
squash for the carrots.

squash tanned from the summer sun, sprinkled with

winter squash,
sweet potatoes, regular potatoes, or anything else that needs an inviting kick.
The thing I love about
winter squash is that is can either go
sweet or savory and be totally delicious.
Perhaps my favorite thing about
winter squashes is that they can walk the fine line between
sweet and savory.
Including fruits and vegetables like apples, pears,
sweet potatoes and
winter squash is an easy way to boost flavor and possible use less sugar.
