love this recipe, the vegetables roasted are a great combo and this is a wonderful way to use your yams, or at least that's what the photos looks like... Mr. smartie - pants (that's me) says yams are
sweeter than sweet potatoes believe it or not, the higher starch content converts during cooking making the sugars... I love both, grilled sweet potatoes are an all time favorite with steaks

Luckily, the recipe is easier
than it sounds: I started by baking one
sweet potato until it was soft enough to slice and remove the flesh.
We've got roasted
sweet potatoes, chickpeas, mushrooms, spinach and vine tomatoes, which we've served with a turmeric scramble (the recipe for that is in Deliciously Ella With Friends) but you can definitely swap that out for something else, if you think your Dad is more scrambled eggs
than scrambled tofu!
Also, I find 5 or even 6 generous tablespoons of cacao powder work better
than 4 as they make the brownies much more chocolaty and disguise the
sweet potato flavour a bit better.

sweet potatoes first rather
than just adding them into the pot?
Interested to see this as I was just going to post to say how amazing your
sweet potato brownies are but also that I've just experimented making them using pumpkin (I have to admit I used tinned rather
than fresh).
The second time I soaked the dates in boiling water to soften them and then I just used a blender stick to blend the dates with
sweet potato and maple syrup (much easier
than a processor) I also made a budget version and used regular cocoa powder, 1/2 honey 1/2 maple syrup, no pinenuts - just 1/2 cup of coconut flour and 1/2 cornflour, I also added chopped walnuts.
There's nothing better
than a beautiful plate piled high with roasted
sweet potato wedges baked until they're so soft and tender with a perfect blend of paprika, salt, cinnamon and rosemary — absolute heaven!
May I suggest though that rather
than peel and boil the
sweet potato (which wastes many of their nutrients) you steam or bake them in their skins.
Since
sweet potato takes longer
than zucchini and onion, I microwaved it whole for a couple of minute to start the cooking and to make it easier to peel.
The
sweet potato adds a lovely sweetness and delivers more nutrients
than traditional pot pie recipes.
