The hubs and I really liked this, and it makes a lot: one
night I used it for nachos with all the fixins, then it went over steamed broccoli, the third day it
topped lentil
tacos, and I dipped into as a snack a few times during the week.
Las
night I made a summery version of Mahi Mahi fish
tacos on the grill
topped with mango salsa!
My kids loved it and we even transformed it into
taco soup the next
night as pictured at the
top of the post!
All that's left to do is
top your
taco the way you see fit, or use their suggested
toppings and this makes for a great family meal
night.

Our dinner rotation is usually sauteed seafood of some kind with probably toast one
night, some variation of pasta with garlicky rabe another
night (adding sausage, using kale or whatever green we have, wuteva), black bean
tacos, and salad with all of the leftover veggies and either tuna salad on
top or roasted chicken.

For example, if I made
tacos for dinner one
night, then I will bake sweet potatoes and load them up with the
taco meat and other
toppings (avocado, salsa, onion, etc.) for dinner the next
night.
Last
night, Brad and I had chicken
tacos for dinner and the Spicy Black Bean Hummus was perfect spread on our tortilla before adding the chicken and other
toppings... delish!
