My go to recipes always involve some sort
of taco style and tortillas.
The bites themselves are easy to make and a yummy little appetizer, salad topper, or serve them up
taco style like I did.
You can go lettuce
wrap taco style and use lettuce leaves instead of pancakes.
The flavors that this uses are ones you don't want to miss out on, and the way it's served up
taco style makes it a nice break from the usual Mexican - style tacos.

You can roll them up open - ended,
taco style, or fold the ends in burrito - style.

It would make quite the classy meal with a simple arugula salad and some crusty bread, but I'm tempted to trash things up and serve
it taco style with grilled tortillas and crumbled goat cheese.
I've made it quite a few times and varied it by using different sausages (my favourite being chilli ones), wholegrain mustard (even used chilli wholegrain) and mixed beans in
a taco style sauce or similar.
