I LOVE Bob's Red Mill Almond flour and have made Sally Fallon's awsome almond meal
tapioca flour cookies with it for years.

So off I went to stock up on
tapioca flour, sorghum
flour, brown rice,
flour, and the like to see if her grown - up fig
cookies were good enough to pass on their own merit.
These
cookies use a combination of
tapioca starch and coconut
flour, which gives it a crisp exterior that cools to a softer texture.
To make the
cookies, put the sorghum
flour, quinoa
flour,
tapioca flour, xanthan gum, and salt in a medium bowl.
Turn the
cookie dough onto a large piece of parchment or wax paper sprinkled with
tapioca flour (the dough will be crumbly, but it's ok)
Keep in mind that these are not like regular shortbread
cookies, and will not have the exact same texture — they will tend to be slightly chewier as opposed to crunchier due to the
tapioca flour..
I made the
cookies last night — halving the recipe, subbing in 2/3 c. teff
flour and 1/3 c.
tapioca starch to make it gluten - free, leaving out the baking soda (we're in a rented condo and didn't have any here), and adding a sprinkle of chocolate chips to half the batch.

tapioca flour in favour of fruit.
As with all the other gluten - free
flours, use white rice
flour in addition to a starch like
tapioca — blending the two together will give your baked goods, like molasses breakfast
cookies and pancakes, a soft, gluten feel.
