7 cups mini marshmallows (12.5 oz if you want to make it easier) 2 cups crushed (roughly the same
size as the marshmallows) chocolate graham crackers, or chocolate wafer
cookies, or 2 cups of whatever your heart tells you 1 14 oz can condensed milk, look for one that's just milk and sugar, like Nestle's La Lachera (also #notsp) 2 tablespoons unsalted butter pinch of salt (or use salted butter and leave this out) 12 oz bag of semi-sweet chocolate chips 1/4
teaspoon peppermint extract 3 - 4 tablespoons crushed up peppermint candies, optional, really not the most necessary thing
Scoop the dough evenly into 2
teaspoon sized mounds and place a couple inches apart on the
cookie sheets (make sure they are mounded and not flat).
Once completely cool, fold in
teaspoon -
sized chunks of vegan chocolate chip
cookie dough (such as EatPastry).
I like these
cookies tiny, barely bite -
sized, so I scoop out the dough in exact, level
teaspoons.
Remove dough from the fridge and roll dough out on a floured flat surface to 1/8 inch (2 mm) cut with a round
cookie cutter approximately 28 circles (2 1/4 inch / 6 cm
size), place 14 circles on a parchment paper lined
cookie sheet, place a heaping
teaspoon of apple filling on each circle, gently spread the filling, be sure not to go over the edge, cover with another circle and close the edges with a fork (I lightly wet my fingers and closed the edges).
Pop small dollops of the dough onto your baking trays, I prefer to brush a smear of butter over mine for biscuits or
cookies, a tablespoon or
teaspoon size whichever you prefer and flatten down a little.
When you have the dough ready, roll

size balls of
cookie dough between the palms of your hands, then flatten each ball into a flat circle.
Roll the almond paste into

sized balls and place in the center of the

To assemble, pipe
teaspoon -
sized blobs of cream into the center of a
cookie using a pastry bag with a 1/2 inch round tip (alternatively, you can spread the filling on the
cookie using a knife).
Roll into
teaspoon -
sized balls, placing on the
cookie sheets 1/2» apart.
Using either your thumb, the back of a round
teaspoon, the handle of a wooden drink muddler, or other similar -
sized item, press an indentation into each
cookie dough ball, almost all the way to the bottom.
Drop 1/2
teaspoon -
sized drops onto greased
cookie sheet or roll out and cut with a
cookie cutter (let dough stand for a few minutes before rolling; it's sticky initially).
