Here are some of my favorite additions: toasted pine nuts, capers, olives, a handful of cooked quinoa,
sliced baked tofu (from a package is fine),
sliced warm Chickpea Cutlets (or any chicken - y thing), garlicky sourdough croutons, vegan
bacon, (deep breath... ok, proceed),
tempeh (Chimichurri or Garlicky Thyme), grilled seitan, grilled asparagus, grilled portobello, roasted squash.

tempeh bacon, baked to crisp and
sliced thin 5 fl. oz.
Add eight
slices of
tempeh bacon to the griddle to heat.
2 - 12 oz package of firm tofu, drained vegetable oil — for grilling the tofu and the

slices of bread vegan mayonnaise 4
slices tempeh bacon 4 large lettuce leaves 2 tomatoes
sliced 16 sandwich picks or 8 teriyaki skewers cut in half 16 pimento stuffed olives — for garnishing the sandwich picks 16 cherry tomatoes

tempeh bacon, lettuce, and thinly
sliced tomatoes with vegan mayonnaise on whole grain bread or in a wrap.
Place two tofu
slices on one
slice of toast and then add two
slices of
tempeh bacon (each cut in half) Top with lettuce and tomato
slices.
Cut these into thin,
bacon - shaped
slices, and then follow the directions for
tempeh, above.
Of course these are awesome but we need toppings to call these loaded nachos, so I went with very thinly
sliced purple cabbage, cilantro (duh), corn, cherry tomatoes, spring onions, orange bell pepper and last but not least some pieces of
tempeh bacon.
