However, the difference it has from normal bread is that instead
of being made with wheat flour, it is usually made with tapioca flour (also known as «
cassava»), with the inside being typically chewy and moist, unlike the common bread's drier inside
texture.
Interestingly
cassava has a sticky
texture by nature as well so it could be the combination
of the
cassava and gelatin.
To get just the right
texture, and avoid the overly - coconutty flavor that happens sometimes, I did a 1:1 combination
of coconut flour and
cassava flour for this recipe.
Finely ground
cassava flour works well with grain - free baked goods and homemade grain - free pastas since its
texture is similar to that
of traditional flour.

texture and performance to wheat flour.
