Yum gingerbread blondies — and they are made with chickpeas — oh I love
the texture of chickpea brownies — or should I say blondies.
You'll be amazed by the deep flavor and luscious
texture of this chickpea purée, which is enriched with crème fraîche.
If you don't care for
the texture of chickpeas, I think this soup would also be nice with a creamier white bean, like Great Northern or Cannelini beans.
My non-vegan family absolutely loved this version, especially the unique
texture of the chickpea eggs!

The
chickpeas and onions add a touch
of warmth, as well as a nice contrast in
texture.
About half
of the
chickpeas are dumped in, sautéed for a bit and then transferred to the blender along with a little bit
of chicken stock to create a thicker, slightly smooth
texture.
It still gives you the crunchy
texture and flavor, but with the benefit
of a garbanzo bean (aka
chickpea).
i use the
chickpea flour when i make actual seitan, but for this the thick
texture and consistency
of mashed
chickpeas seams required to make it actually seam like country fried chicken steaks.
The
texture is very light compared to oat or
chickpea flour; however, it soaks up a TON
of moisture, so you can't replace equal parts
of other flours with the same amount coconut flour.
Both are lighter than oat or
chickpea flour, which I use in a lot
of other baked goods, but I avoided here because they can give a little bit more dense
