than almond milk because that's what I had
in the cupboard.
Agave grown
in the highlands benefits from richer soil, greater rainfall and cleaner water
than plants grown
in the lowlands, producing a higher quality of sugar that
in turn creates a better tequila.
Dates have an enormously high sugar content, and yes,
agave is even worse
than honey
in terms of fructose content which is probably not what the health food industry would have you believe!
after doing a little research on how to use a date
in a recipe, i narrowed my options down to making a date - paste (which is similar to
agave), soaking the dates
in hot water for hours (no thanks ~ i'd like cookies sooner rather
than later), or chopping them up
in the food processor (sign me up).
It is more expensive
than agave but less expensive
than yacon, and more widely available (
in Toronto anyway).
Rum is gluten free, and although it seems a little sweeter to me
than tequila (it's made from sugar cane as opposed to the
agave plant that tequila is made from) a little rum every once
in awhile will not hurt you:).
Anna Rhoades, I often use Coconut Secret's Coconut Nectar
in place of
agave as it's also a sticky liquid (so it doesn't change the recipe) and supposedly much healthier
than agave with a low glycemic index and more nutrients.
I also use only one - half ounce of tequila (preferably 100 %
agave) ather
than a full ounce or two that most single - serving recipes call for — this creates a further reduction
in carbs along with lessening the chance of getting a hangover.
Since
agave nectar is also «natural» (it's got ta be, with «nectar» and an exotic word like «
agave»
in the name), could it too be different
than other sugars.
~ Depending on how sweet your apples are, you may need even less
agave than listed
in the sweet potatoes, or perhaps even no
agave at all!

agave is better
than other sweeteners
in terms of blood sugar, though some people need to avoid sugar altogether (such as avoiding fruit).
I wanted to make these lower
in sugar so we only used 1/2 cup
agave and substituted a little less
than 1/2 cup of unsweetened vanilla almond milk (what we had
in the house), and added about 2 tablespoons of stevia.
But it is so much healthier
than the honey and
agave nectar that they use
in their baked goods.
