I was shooting for muffin rather
than cupcake so only used 3 / 4c sugar, double vanilla, plus 1/2 cup walnuts in the batter.

cupcake cookbook came out I was thrilled b / c it is
so much easier to get coconut
than real almond flower.
I made dinner rolls for the 1st time and they were a little denser
than I wanted... was wondering if the xanthem gum was the culprit...
so I looked up adjusting xanthem gum for dense bread and it brought me here... your article says if bread is rubbery it might have too much xanthem... I have perfected my
cupcakes they are light fluffy and moist... and good enough that I was able to sell them at a local cafe for 3.00 a piece and could not keep up... anyway the xanthem gum measurements for cakes is supposed to be 1/2 tsp per cup and I only use 1/4 tsp per cup...
so I am thinking if I reduce the xanthem in the rolls it would produce an airier roll... as everyone knows gluten free flours can be expensive... and I wanted to avoid making a failed batch as bread and cake are a bit different... the 1st batch tased great... just won't leave much room for food due to density... as is the problem with lots of gluten free stuff... am I on the right track?
So rather
than do a four layer cake, I decided to bake one two - layered, 20 cm cake and 12
cupcakes using a muffin tin.
Therefore, I am
SO thrilled (doing a major happy dance) because these vegan carrot cake
cupcakes are
SO much better
than I anticipated.
As such, these
cupcakes are
so different
than any other raw dessert I have made.

It made a little more
than could fit in a bread / loaf pan
so I ended up making 4 extra mini loafs in a
cupcake pan, just oiled it with olive oil and it didn't stick.
I'm a huge fan of anything vanilla (more
so than chocolate, even),
so I couldn't wait to try the
cupcakes.
You can bake this into a cake instead of
cupcakes, but I made them for a dinner event
so I figured
cupcakes were easier to serve
than a cake.
For me a muffin is usually just a naked
cupcake, which is less
than,
so in my food dictionary muffin equals
cupcake with streusel.

so I think it is better for him

cupcake with frosting.
The cookies were flatter
than I like,
so the second batch got thrown in a
cupcake tin and baked up
so they were thick cups of goodness.
