During my month of non-blogging (which feels suspiciously like it's morphing into two months of non-blogging, except that I'm typing this right now) I did re-photograph some old
recipes, but then as I was placing the new photos into the old blog
posts I found that it's honestly easier to write a whole new
post because I used to write my

than a focused
recipe.

than just a gluten - free pumpkin muffin

I try my best to alternate sweet / savory with the
recipes I
post, but, I'm going to be honest and tell you that I've had a more
than a bit of a sweet tooth lately.
Ever since I
posted my (Better
than Olive Garden), Zuppa Toscana
recipe, I have been itching to make an Olive Garden Chicken Gnocchi Soup Copycat because I knew I could make it lighter while tasting equally delicious — and because gnocchi in soup — yasssss!

It's ironic that I had both of these comments in a span of 15 minutes, while writing this
post, because nothing exemplified Amy's feelings more
than when I was developing this quiche

The crazy month is why this

I've always been nervous about cooking for other people, and this blog has amplified the pressure a little bit — our friends and family see me
posting all these
recipes, so the whole idea of me cooking dinner has become a little more exciting
than it used to be.
I know it's been way too long since I
posted any new
recipes, but holy man, the holidays took way more of a toll on me
than I was -LSB-...]
I still have over a month of writing to go before I turn in the manuscript, then a few rounds of edits, so chances are I'll be a little quieter
than usual on the blog — case in point, I totally forgot to
post a
recipe last week.
I did my best to stock up on
recipes before I left so that I would have a stash to
post on the blog, but our stay was longer
than expected and I had to do a little cooking in their kitchen — which they were kind enough to allow.
I'm going to be
posting about each of the cities we visited (Gothenburg, Oslo and Stockholm) once a week for the next three weeks rather
than all at once, seeing as I've got
recipes I want to share as well.
So, rather
than forcing it, I decided this is my blog dammit and if I don't feel like
posting a savory
recipe the first week of the month I WO N'T.
And what better way to kick the first
post of the new year off,
than with a quick and simple go - to
recipe.

I made another batch this morning with 2 flax eggs and it definitely made them more solid and dense

posted.
Sometimes when you
post recipes, you are not actually use anyone other
than yourself ever makes them.
And finally, it is always so wonderful to read all the
posts one after another... reminds me of all my old friends and the chatter we would have over a
recipe and how each one works it differently or whatever... I take away much more
than the
recipe form your site!
This past week I too
posted a
recipe on how to make your own coconut milk, only I show you how to do it with dried coconut rather
than fresh.
I know photo's aren't the be all and end all, but I do know that some of my older
recipes /
posts deserve more
than what they got all those years ago.
I always look forward to your
posts for so many reasons, but mostly to read the story behind the
recipe or the process — more often
than not, I find myself nodding in agreement or laughing and always smiling!

The funny thing about photographing cakes is that you basically have to photograph the entire thing and then HOPE it tastes edible [preferably better
than edible] so you can

recipe without having to remake it.
