For this recipe, I used gold beets, which are a lot easier to work with
than red beets since their juice is lighter in color and thus doesn't stain everything.
They are great in salads, soups or as a side dish, providing a cheerful yellow splash of color and a wonderful sweet, earthy taste (but milder in taste
than red beets).
