We will pair it with one of my favorite
thanksgiving dishes — curried butternut squash soup.
It's Thanksgiving this week, which inevitably means the work week stops mid-way; the shops close as families gather for long - awaited reunions with loved ones; and people begin a feast filled with turkey, pumpkin pies, all kinds of stuffing and other
thanksgiving dishes.
Also, this can be a great alternative for
a thanksgiving dish.

forgive my ignorance - but i'm preparing to make this
dish for
thanksgiving and i could be dense - but do you mean cook 3 cups of quinoa - or that i want 3 cups of cooked quinoa (in that case how much dry quinoa is that?)

Since some of the items on the
thanksgiving table are on the heavier side, I think it is always a good idea to balance things out by having at least one or two
dishes on the lighter side.
I originally intended for this recipe to be a
thanksgiving side
dish, but after making it and devouring for lunch, I realized that this is an any - kind - of - day
dish.

I seem to change up my vegetarian
thanksgiving main
dishes every year (so many great options!)
When I made this last night, we ate it warm, but for
thanksgiving I will prepare it a couple hours before dinner and serve it as a room temperature salad (if only because next week there will be 10 people vying for very limited stove space and trying to get a hot
dish to the table is a fast way to create a lot of anxiety — I think right around crunch time, I'll step out of the kitchen with a glass of wine and leave the hot
dishes to others).
Now I really enjoy having it every
thanksgiving dinner as a side
dish.

This stuffing is just the thing to serve alongside meat (such as turkey on
thanksgiving, natch) or as a vegetarian main
