oats!

there is a banana bread with
oats and pecan nuts.
I normally soak my
oats in coconut or almond milk but when I was at my parents house
in Italy recently
there was a jug of fresh - squeezed blood orange juice so I used that.
The texture is much more interesting as the buckwheat grouts add a really nice crunch,
there are still
oats in the mix, but
there's just a little more going on
in between them.

in cups simply because
there's no need for exact precision with overnight
oats.

I know my recipes focus quite heavily on using gluten free
oats (clues
in the name), but
there are a small percentage of people diagnosed with Coeliac Disease that may still be sensitive to certified GF
oats, and therefore can't eat them.
This is a bit different from overnight
oats in that
there is more emphasis on add -
ins, including coconut, pumpkin seeds, raisins, and fresh apple.
A month later,
there was almost nothing
in my kitchen my
oats didn't touch.
And I don't think these cookies are gluten - free anyway, since apparently

There is always the question of what type of rolled
oats to use

there aren't any clumpy bits

oats... not even if you forget to give them a good stir while they're simmering away on your stovetop!

in your photos, it looks like
there are some whole
oats, not just oat flour
in the crumble mixture, although
there aren't any whole
oats in the recipe.
Overnight
oats are such old news, but I love them and figured it was time to share my everyday version of overnight
oats in case
there are some of you that haven't tried them yet....
There is one I used to buy
in a coffee shop here that had
oats, chocolate chips and coconut flakes... Next time I try this recipe I might try throwing
in some because that was my ultimate favorite cookie.
