Minestrone sometimes ranges from a
thick and dense consistency with boiled - down
vegetables, to a more broth heavy
soup with large quantities of diced and lightly cooked
vegetables.

2 tablespoons oil (ghee / coconut oil) 1 medium onion, diced 1 lb carrots (about 5 medium carrots), peeled and sliced 1/2 head of small / medium cauliflower, chopped * 2 cloves garlic, chopped 1 teaspoon fresh grated ginger 1 teaspoon ground cardamom (green, not black) 1/4 teaspoon ground cinnamon 1/4 teaspoon ground cumin Red pepper flakes (to taste) 1/2 — 3/4 teaspoon sea salt (depending on taste) 3 - 4 cups chicken stock or
vegetable stock (depending on how
thick you like the
soup) 1 cup coconut milk
(less time and
vegetables will be well formed and
soup broth thinner, cook longer and
vegetables dissolve but broth will be slightly
thicker.)
If the
soup feels too
thick, stir in 1/4 cup of
vegetable broth at a time until you've reached the desired consistency.
Unlike Kansas City Barbeque Society competitions that feature pork, chicken and beef, the Owensboro competition highlights chicken, mutton and burgoo (a
thick soup made with mutton, beef, chicken and
vegetables).
(Actually, that is a Bantu African word for okra, one of the key

thick and creamy, so tasty and crazy loaded with all sorts of yummy chunks of chicken and

Another useful trick is to use

soups that have been thawed from the freezer if they have become too
thick after being frozen.
Thick soups are often further defined by the chosen thickening agent: purées are thickened with starch, bisques often use puréed
vegetables and shellfish, and cream
soups are often thickened with a roux (blend of a liquid, flour and butter), cream, rice, tubers, or grains.
Thick, hearty,
vegetable - based
soups are one of my favorite ways to fill up.
While gumbo
soups are generally meat or seafood filled, this plant empowered version gets its wonderful
thick and hearty texture from the addition of beans, mushrooms and, of course, loads of
vegetables.
