The only
things I tweaked a bit was using 1/2
cup white rice flour, instead of 1/4
cup superfine sweet rice flour and 1/4
cup white rice flour
as I'm out of the first right now, and substituting the tapioca starch with cornstarch.
I only did 1/4 tsp for the whole
thing when it should have been 1/4 per
cup of flour
as you said.
Whipping cream gives a runnier caramel, that's still yummy but doesn't set well, and
things can get... messy For this recipe, I really recommend using grams (at least initially)-- the textures and consistencies are key (the cookie bottom just crumbly enough and the caramel layer sticky but not runny) and I'm not sure if you can be
as precise using
cups / tablespoons.
A couple of
things though, I used almond flour / meal (1 1/3
cup as recommended) and instead of honey or maple syrup, I used organic brown rice syrup, used the same amount
as listed for maple syrup, AND I added a handful of unsweetened organic coconut flakes for added texture and flavor... turned out PERFECT!!
The only
thing that might make these cookies even better is to pour yourself a
cup of orange spice tea to sip
as you munch these amazing cookies.
So delicious
as a dessert, and even great first
thing in the morning with a
cup of coffee.
Because it was last - second I didn't have all the ingredients, like cream cheese, so for the 1/2
cup cream cheese I substituted 1/4
cup yogurt and 1/4 butter (same
thing as cream cheese, right??).
I have a vitamix blender (also known
as the second love of my life) so I need hardly any liquid to get
things blended, but you may need up to a
cup depending on how powerful your blender is.
If the batter is too thick or becomes too thick

things rise more, so I used the full 1 and 1/4
cups for the pancakes, but you may not need that much).
As a bonus, you actually dirty fewer dishes when cooking this way because you don't need to use 10 different measuring
cups — just add
things one - by - one to the same bowl and zero the scale in between each addition.

thing as yogurt in the instructions below the recipe?
I found I had about 2
cups of stuffing left over, so I chopped up the remaining artichoke hearts from the can and added them into the remaining stuffing and baked it in a casserole dish to use
