I can imagine it being pretty great that way, particularly if you under bake it by just a hair to keep
things extra moist.

I add a bit of oil to keep
things moist (as I do with most of my muffins), and honey for
extra flavor.
I know it sounds funny to say add a little more flour and a little more liquid... but because of our dry environments a couple
extra Tbsp of liquid (up to 1/4 cup depending on how dry it is) goes a long way in keeping
things moist.
Keep in mind this is not like any bread you've had before, the only
thing I can liken it to is a very dense
moist date nut bread, but without the
extra sweetness.
