The last
thing you want is to be born with a silver
spoon in your mouth, and those who are have a real problem
in somehow discounting their «papers.»
To celebrate bringing
in the New Year, I think one of my favorite
things to do is dig into a Big Skillet New Year Cookiepalooza with lots of
spoons and friends.
I was actually scrounging through the food
in my house to find
things to put it on because I felt bad just eating it with a
spoon.
A couple of
things that could contribute to the batter being thicker than expected: - Not letting the flax egg fully set - Not using the exact flour blend
in the recipe (I have not tested this with other flours, only the ones
in my blend)- Dipping the measuring cup into the flour vs.
spooning it into the measuring cup - The flour not being at room temperature (if it's from the fridge or freezer, it will be dryer and will suck up the moisture).
I think I could literally eat that whole
thing too
in one sitting, just hand me a
spoon.
The fact that they are mini (and we all know that everything is better
in miniature, a fact I've proven before), only adds to their appeal: he gets his very own cookie all to himself, and doesn't have to touch
spoons with me (his aversion to sharing is baffling, but I chalk it up to simply «a guy
thing»).
My coffee ritual is one of the most important
things I do
in the morning — two
spoons of sugar
in the raw, one teaspoon of half / half, and medium - dark roasted coffee.
Spoon in the pesto, and then use the plastic wrap to help you roll the whole
thing together.
A fruity filled veggie made pudding / frosting / smoothie - loving / nice cream
thing in a jar!!!! I guess I better go grab a
spoon because I approve!
or just cool and refrigerate the whole
thing until the chocolately center firms up... get a few
spoons and dig
in!
Lemon curd is one of my favorite
things to spread on toast, dollop on scones, stir into plain Greek yogurt (or layer with granola
in a dessert - for - breakfast parfait), or just eat straight off a
spoon.
You see, while this vegan cookie dough is absolutely delicious on its own (you + this cookie dough +
spoon = best
thing ever... although fingers work too), it's even better
in a healthy salted caramel cookie dough ice cream sundae.
There's rarely a day that goes by that we're not sticking a
spoon into one of these jars, blending some into our coffee (berry coconut espresso drinks are absolutely a
thing in this office!)
Once the batter has been left to do its
thing for 10 mins, heat a tbsp or so of coconut oil
in a nonstick pan and
spoon a couple of tbsp of pancake mixture into the pan.
As I rambled about
in great detail above, although I am sure it works beautifully, the whole 5 - part food processor + bowl +
spoon thing loses me.
The nice
thing is with the boiling water + slotted
spoon + ice bath method, you're
in no rush.

But my ultimate favorite
thing to do is to
Spoon in some almond butter, then top it off with lots of applesauce and mix it all together.
In a glass jar, I have to stir with a hard plastic
spoon before use to even
things out.

things, you can
spoon a little bit of the batter out into a separate bowl before adding the xylitol.
It is simple to even
things out with the
spoon once all of the batter is more or less
in a 6 - inch circle.
Another
thing you can do
in the future is let it cool completely
in the oven — stick a wooden
spoon in the door so it's open just a crack, and let the granola cool down
in the oven.
