Everyday is a new adventure and a total gift and opportunity, sure some
days things don't go right, or I have to
work really hard, or I get rained
on but I don't let that be the focus.
I don't typically post
on the weekends, but I was traveling for
work and
things got more hectic with going from one place to another and not always having the internet made me miss a
day!
After almost two weeks of time off over the holidays, it was really hard to contemplate going back to
work, so
on my last
day off, to make myself feel better about it, I made the most comforting
thing I could think of: apple pie.
It
works great
on day - old macaroni salad, when you need to moisten
things up a bit.
Sometimes my entire
day feels like it can be focused
on food so having an opportunity to keep
things simple while still tasty
works great for me.
I adore salads — I tried to eat a salad a
day for a whole week — thinking it might
work much like a rain dance and move spring here quicker — alas the whole
thing backfired and we are back to lows in the 30's this week — with 29 F
on Wednesday!
Things work better when the custard base and coulis are both thoroughly chilled before churning, so do that
on the first
day.
Icecream, milk, and sometimes a little bit of hot chocolate powder, mash mash mash with a fork (kitchen machines and mixers were still a little out of my repetoire at this point... And the fork
worked surprisingly well:P) and it was the most delicious
thing on a hot Summer's
day!
I'll be spending my extra
day off doing blogging and health coaching
work instead, running some errands, cleaning, going for a hike at our nearby favorite park, and taking my Batpuppy to the vet (just for an annual
thing)... Backing it up to the beginning of the weekend, I kicked off my post-
work Friday with a trip to the Del Mar dog beach
on another 90 degree
day: I love it at the dog beach, it's so beautiful and such a happy place!
Probably not the best
day to start a cleanse
on a
day when you run 10 miles but the great
thing is the plan is very flexible, it's all about making it
work for you and giving your body what it needs which I definitely did
on that
day.
I don't know about you, but sometimes after a hard
day at
work, one of my favorite
things to do is to curl up
on the couch with a warm blanket and dinner.
