Since we can't eat straight tofu cubes (well I suppose we CAN and I DID, but I
thought I'd give you a full recipe), I threw that tofu in warm corn tortillas slathered with my curried red lentil hummus, and then added a bright and fresh coconut citrus
slaw for some extra crunch.
I've been having soups for lunch all winter but just today I was
thinking I want to switch back to my usual cabbage
slaw with rotisserie chicken that i normally eat in the summer!!
I have been wanting to try shrimp tacos and I do
think that the
slaw is the kicker here.
We
thought it was good, I followed the recipe exactly, except used broccoli
slaw from Trader Joes instead of Cole S

This combination of ingredients makes the
slaw a brightly colored, sulfur rich, Vitamin C packed powerhouse... but you don't have to
think about that while you're eating it.
When you
think of cole
slaw, you might
think of the gooey side dish at your favorite diner.
Brussel sprouts are similar to cabbage so I
thought along the lines of a warm, sweet and toasted cole
slaw.
I would never have
thought of using broccoli
slaw that way but will have to try it.
I've got a busy schedule ahead, but I
thought I would post on the interesting stuff I find that would fit
Slaw's profile.
I'd hoped for a happier first post for my return to
Slaw, but I do
think it's important to shine the light on the forthcoming reductions to Library and Archives Canada and any broader impact or mirroring of reality.
