Think radicchio, endive, frisée, and escarole — these bitter greens add a pop of flavor while cleansing and even relieving stomach upsets.
We thought the radicchio made the salad a bit on the bitter side, but I added in some raisins and it was a home run.

think adding in some
radicchio could help get one more superfood in, though.
The salad contained shaved fennel, baby gems, floppy lettuce, avocado,
radicchio, chicory with pink grapefruit, pink radish, dill, beetroot and caramel pine nut (I actually
thought they were walnuts to be honest) dressed in its own beetroot juice split with olive oil.
I may add some sauteed
radicchio as a garnish for the superfood health benefits, plus I
think the bitterness would go well with the sweet apple.
If you still
think the flavour of the
radicchio might be a bit too strong for you, then I recommend lightly tossing it in olive oil and roasting it in the oven at 200 degree Celsius for 10 minutes before chopping it up and adding it to the salad.
If you've never had escarole,
think of it as a halfway point between lettuce and kale — it's a fabulous winter green, and is related to endive, chicory, and
radicchio.
