I
thought whipped coconut milk might be the perfect substitute for whipped cream in my
roasted strawberry parfaits.
For the
strawberries, I
thought about
roasting them with a little bit of balsamic vinegar instead of covering them with sugar to get syrupy.
I made a mental note to bake with it here,
thinking that its light floral taste would go nicely with the
roasted strawberries I would be serving alongside the cake.
I'd read somewhere on the internet that
roasting strawberries really brought out the flavour, which kind of makes sense as soon as you
think about it.
My first
thought was to simply add brown sugar atop the
strawberries before
roasting.
We'll be celebrating Valentine's Day with dinner at home (I'm
thinking steak + mashed potatoes +
roasted veggies + homemade chocolate covered
strawberries) because you won't catch us dead out on one of the busiest restaurant nights of the year.
