This one here is very quick and simple, and
I think sweet corn makes it a bit different.

My first
thought was the
sweet corn and blueberry salad I posed 2 weeks ago... I
think I could blend spinach into this batter and make that salad into pancakes.
I
think the combination of onion and bell peppers with the
sweet corn should be quite tasty.
If I'd been
thinking ahead, I would have written about something a little more fall - oriented (given that the baby wasn't born until September) rather than something celebrating the wonders of late summer produce, because now that the recipe is live on Jenni's blog,
corn and basil and blackberries are — sadly — just a
sweet summer memory.
I have never
thought to put dill butter on
sweet corn, but now I can't wait to give it a try.

I also begin to
think of soup, perhaps a
corn chowder with the last of the
sweet corn, or a butternut squash soup from last year's squash — I still have a few in the garage.
I just had a
thought, though: perhaps I can make millet tortillas to bake & blend, and then maybe sub
sweet potato for the
corn kernels.
My first
thought was «in a crock pot with brown sugar, cinnamon, & marshmallows» then I realized that wasn't the best way to «improve» my health... sugar and high fructose
corn syrup are not the answer, but
sweet potatoes and cinnamon were a good choice.
I
think the idea of
corn + seeds is a fine one, and we regularly use a slightly
sweet, lime vinaigrette very much like this on a salad of
corn, black beans, and red peppers.
I
think I'll throw in a few fresh
sweet corn kernals too.
I love the addition of raw summer
sweet corn — and I really
think you'll dig the fresh flavor — but if uncooked
corn is a personal dealbreaker, feel free to grill your ear beforehand OR give the kernels a quick sauté in a little olive oil.
I used
sweet yellow
corn for this recipe and I
think the sweetness of the yellow
corn balances really well with the smokey and sometimes unexpectedly spicy roasted poblanos.
I
think what I love about this soup is the fact that it is fall, with the
sweet potatoes, but still summer with the
corn and kick of jalapeno.
I
think chili with
sweet corn bread on the side might be one of those «perfect Fall dinners.»

Think of these as
sweet corn tortillas.
I would have never
thought to mix
sweet corn with blueberries, but now that you've done, I can see how this would be a delicious combo.
Think 1/4 plate lean protein (e.g. meat / chicken / fish / legumes / lentils), 1/4 plate of low - GI, complex carbohydrates (e.g.
sweet potato / pumpkin /
corn / brown rice / quinoa) or 1/2 a plate of low - starch vegetables topped with avocado or extra-virgin olive oil.
Be on the lookout during this challenge for: dextrose, maltodextrin, sucrose, fructose, cane sugar, evaporated cane juice, acesulfame potassium (sold as
Sweet One — often combined with aspartame or sucralose to sweeten gum, diet soda and other
sweet products), aspartame (Nutri -
sweet and equal), saccharin (sold as
Sweet n» Low), stevia (combined with sugar alcohol and sold under brand names like Truvia and Pure Via), erythritol (a sugar alcohol derivative of
corn) xylitol, brown rice syrup (and other syrups), high fructose
corn syrup (made by treating starch extracted from
corn with enzymes to make fructose and glucose)-- and if there's anything on a food label that you
think might be sugar, google it.
We satisfied our
sweet teeth by eating fluorescent blue and green snacks shaped like our favorite cartoon characters, we quenched our thirst with highlighter yellow juice drinks that contained
corn syrup as the first ingredient, and we never spared a
thought to whether or not this was good for our health.
When I
think of summer, I
think of fresh garden ingredients like tomatoes ripened on the vine,
sweet corn, and juicy watermelon... just to...
