I really like the yellow split
peas — I
think they have a slightly
sweeter and nuttier taste (which I just added as an update to my post) compared to the green split
peas.
They are just so long lasting, long stemmed, and I
think it's one of the best smells of summer - an armful of
sweet peas coming in from the garden, or a tiny little vase next to my bed when I wake up.
I
think we're nearing the end of my
sweet peas this year, actually, hence needing to be sure I got another round in last night (dinner can always wait).
I then top the greens with a mix of colorful chopped raw veggies (
think, snap
peas, radishes, carrots, cabbage, peppers, etc.), roasted veggies (
think, cauliflower, broccoli,
sweet potato, butternut squash, etc.), and a grain (quinoa, brown rice, farro, etc.) to create a mixture of textures and colors.
Packed full of fiber, protein, and folate, legumes are a great, inexpensive food that is extremely versatile (black - eyed
peas are awesome on top of brown rice; edamame are wonderful on a salad; cranberry beans are great as a stew with coarsely chopped root vegetables —
think carrots,
sweet potatoes, parsnips).
I never
thought of putting
peas into it but I can just imagine that fresh,
sweet pop.

I
