I love a great salad with arugula,
thinly sliced pears, goat cheese and spicy toasted pecans.
Then add a few slices of a leek, whites only, then
thinly sliced pear.
In the potato shell evenly spread the duck mixture, then
thinly slice the pears and spread atop the duck mixture, lightly pressing them into the meat.
Thinly slice the pear and layer over the greens.
