So I
sliced the
beets very
thinly, tossed them in olive oil and some Thai chili garlic paste (amongst other things), and baked them into spicy, beautiful, crispy bites.
Slicing the
beets thinly, and roasting them this way, not only cuts down cooking time, but also makes the
beets taste even better — slightly crispy on the outside, but still chewy on the inside.
So though this one is without the
beets and caramelized onions I added in some wasabi mayo, edamame hummus,
