I always get a chuckle when people are horrified at the
thought of putting lard in cookies or pastries but
think nothing at all
of adding shortening — which is one
of the worst things you can put in your body because
of the high levels
of trans
fats.
I opened up all my cupboards,
thought about what kind
of nutrition I wanted to get out
of my snack (fiber, vitamins, minerals, protein, carbs, heathy
fats), chopped a dark chocolate bar in half, turned on my hob,
added some water to a small pot, took out a bowl and threw in a bunch
of seemingly random ingredients, rolled that dough into truffles, dipped them in what was by then melted chocolate, stuck the truffles in the freezer for 8 minutes and BAM!!!!!!!!!!!!! They were ready!
I treated it like a dip for the carrots, and since I still have half
of the container left I'm
thinking I'll use it in a GF pasta dish and
add more
fat to it.
I
think if it was just liver it might get too dry, but the meat would
add a bit
of fat which should help keep it chewy and not dry.
I like more cheese flavor and less
fat so I go with yogurt instead
of sour cream (and definitely no mayo) as well as the lemon or vinegar, and I usually grate in a (very) small clove
of garlic too — somehow the tang plus the garlic gives the bleu something to
think about and play off
of without the
added salt.
You would
think it is loaded with cream, but actually there is just a touch
of fat free half and half to
add to the consistency.
Crispy bacon works fine but, as we're talking about a spinach and zucchini soup, I
thought adding it a little more
fat was no big deal
Of course, vegetarian can still realize this soup recipe without the bacon part.

add - ins, and which I
think work perfectly, you use a ratio
of 3.5 parts flour to 1 part
fat (350g flour, 100g oil).
I did everything wrong from accidentally melting the butter when trying to soften it in the microwave (put it in the freezer for a few minutes afterwards) to most likely curdling the sugar mixture when I
added the yogurt (the low
fat kind) to yanking the muffins out
of the oven 5 seconds after I put them in there hoping like crazy that the
thought of rising hadn't even entered their little muffin heads yet while I dumped brown sugar over the tops.
Lots
of Horseradish (fresh if you have it) Splash
of hot sauce Pickled okra,
fat olives, gerkins, and cooked, peeled shrimp on a skewer I tend to
think celery stalks get in the way, I wan na swirl my drink with my skewer
of deliciousness I'm from Baltimore, and in these parts we rim the glass with Old Bay - it
