And as I
roasted carrots for our main course, I started
thinking of a recipe, and thank goodness it was a success!!
At first we
thought this includes
roasted peppers (because
of the color), but it was the
carrots, which make this much more interesting!
Since I can never get enough
of roast vegetables, I
thought I would
roast some
carrots and butternut for their colour, vitamins and crunch (the
carrots at least), lightly steam some thin green beans — ditto vitamins, colour and crunch, throw in a few kalamata olives and low fat feta and scatter over some finely chopped spring onion and a couple
of handfuls
of toasted pumpkin seeds.
These
carrots turned out so darn good I am
thinking about
roasting up a batch to snack
of the rest
of week.
I would never have
thought of putting crispy kale bits on top
of roasted carrots.
I'm a big fan
of roasting carrots, I
think it really brings out their flavor.
I then top the greens with a mix
of colorful chopped raw veggies (
think, snap peas, radishes,
carrots, cabbage, peppers, etc.),
roasted veggies (
think, cauliflower, broccoli, sweet potato, butternut squash, etc.), and a grain (quinoa, brown rice, farro, etc.) to create a mixture
of textures and colors.
