You don't need to downshift; throttle bodies don't have to open; fuel and air don't need to combust; the car just goes.

doing the same thing, i put new motor mounts on, loosened them and retightened them and also cleaned the

I'd check for leaks in exhaust up stream of the O2 sensors or leaks in the intake tract after the MAF (if it has a MAF) or after the
throttle body if it doesn't.
Did you completely removed the
throttle body?
During my investigating i noticed the check engine light didn't come on when i unplugged the MAF, and it was also coated in engine oil which had leaked all the way down into my air filter from a gummed up pcv so now im under the conclusion i prolly need a new MAF sensor AND a
throttle body... ouch!
It has a B6BF MAF with a 5 pin connector, but I don't see anything else between the air filter and the
throttle body.
It's obvious that you don't want a TB (
throttle body) that's too small because that would restrict the airflow.

Releasing the accelerator well before the redline that is marked at 7200 rpm doesn't entirely starve the six
throttle bodies (the engine, with its forged internals, will happily rev to 8500 rpm).

did this when I installed the cold air intake and
throttle body to clear a too lean code as well as idle issues I was having, it
did the trick on that.
If you
do not have a blow off valve, when you close the
throttle body, the turbo is still spinning and pushing air.
