Last year I created my all
time favourite recipe
for gingerbread cake in loaf form (it has pumpkin in it which I think is why it's so ridiculously moist) which I knew I had to put in my book because it's just so damn moreish.
I make
gingerbread biscuits
for Christmas every year, and my tip would be to add about 5
times the amount of ginger that the recipe says (as well as some cinnamon and nutmeg).

Since I'm not a frequent maker or eater of
gingerbread, I'm kind of neutral on whether it was right but if it was too spicy
for you, definitely dial things back so it meets your tastes next
time.
For the record,
gingerbread cookies (and
gingerbread in general) is always relevant — regardless of the
time of year.
The wee bit of glaze on the top of each muffin is just as simple as could be (to confectioners» sugar, add water 1/4 teaspoonful at a
time until you have a very thickly pourable glaze), and is mostly because the
gingerbread muffins were looking
for a little jingle, a little bling to look like they were in the spirit.
I also felt the urge to make
