It's been so beautifully sunny and warm
in England recently, which meant that it was
time to really get into summer
cooking — beautiful salads, cold wild
rice and quinoa dishes, grilled summer veggies with delicious dips, mountains of guacamole with crudités, so many fruit smoothies, raw desserts and bowls of fresh berries.
Start by placing the brown
rice in a saucepan with boiling water and a tablespoon of tamari and allow it to simmer for about forty minute until
cooked — make sure that it never runs out of water during this
time.
If you're making
rice simply boil this when the pot goes
in the oven so that the two finish
cooking at the same
time.
Very mild
in flavor the way it was, so next
time I will probably do 1.5 - 2x of everything for a more intensely flavored
rice, and I think I will
cook the
rice with coconut milk instead of water to up the coconut flavor.

time I won't let it go as long as I did this
time in the slow
cooker, or maybe I will add the
cooked rice the last 30 - min or so of
cooking.
Of course, there is that
time issue; brown
rice takes 40 minutes to
cook, while oats are ready
in mere minutes.
* I used the zest — finely chopped — and the juice of one lemon for
cooking 2 cups of Arborio
rice in chicken stock, about 6 cups including some water, stirred

I have been staring at the steamer attachment for my
rice cooker for years, and it's just sat
in the furnace room of my basement, untouched, the entire
time.
I also just put the mix directly on the baking tray, sprinkled with a tiny bit of
rice flour and flattened into shape before
cooking, rather that what Her Pigness describes doing which was too
time consuming for me and I was
in a hurry (as usual)!!
The starches

rice noodles and tofu, this is a meal that is true to Thai flavor, but
in a much simpler and faster
cooking time.

rice (which is only 20 minutes), you can get the rest of the ingredients prepped and grilled.

time for dinner, you just

in bowls on the dinner table, and let everyone arrange their own plate.
Near the end of the
cooking time, add 1/4 — 1/2 cup of the remaining milk (depending on the creaminess you desire), keeping
in mind that the
rice should not absorb all of the milk.
Should you prefer
rice, quinoa or barley, put the grains to soak
in the morning or already
in the evening before to reduce the
cooking time, enhance mineral absorption and make the grains more easily digestible.
I haven't made
rice pudding
in a slow -
cooker but I suspect it would work; might be safest to begin with a well - tested recipe for
time and settings and just use these flavors / proportions instead.
Next
time I will prep the lentils and cracked wheat
in my
rice cooker; they stuck to the pan pretty badly!
White
rice is typically used
in this dish, I've never had it with brown
rice but I'm sure it would be delicious for those of you who prefer brown — you may have to adjust the liquid and
cooking time.
I tried
cooking both prawns and brussels sprouts &
rice at the same
time but ended up
in a slight disaster with frying pan slightly over turning with hot oil on counter top.

Also my
cooking appliances are limited to a toaster oven, a tea kettle, a
rice cooker, a hotplate, and an over-enthusiastic electric wok (and only one of these can be plugged
in at a
time without being relocated, or fuses will blow).
If you can
cook the
rice in advance, that will save you a lot of
cooking time, since
rice can take up to 45 minutes to
cook (depending on the type you use — brown
rice takes me 45 minutes to
cook).
My current favourite veg is pak choi — whatever other veg I'm stir frying, I'll add a whole pak choi for each of us at the end of the
cooking time, steam it over the
rice or noodles until soft and then quickly toss it
in the pan
in hot sesame oil and garlic.
