You want to let the pancakes
fully cook on both sides, so they need a low temperature or you're going to have some issues.
Cook on both sides over medium heat until nicely browned, being especially careful not to flip before the first side is nice and solidly golden brown.
I like the push the edges of the burger to the side of the pan as I cook them to make sure they are
