To serve, place
cooked rice noodles in a bowl and top with maple ginger tofu, steamed broccoli, and sesame seeds (optional).
In one large pot filled with filtered water and a little salted water,
cook the rice noodles as directed on the packaging.
The method
for cooking rice noodles varies from brand to brand — sometimes they're soaked in hot water, sometimes boiled, so check the package.
Add cooked rice noodles to the pot of vegetables, stirring well, and pour soya sauce over evenly, then add chicken and egg:

Cook the rice noodles following the package instructions (but maybe a minute less than suggested), then drain the noodles in a strainer and toss them in a little sesame oil to keep them from sticking together.
Add a bunch of fresh veggies,
cook some rice noodles, add a little sauce... stir fry!
We had left over lentils, so
I cooked some rice noodles and roasted Brussels sprouts and it was delicious!!

the cooked rice noodles to the skillet, spread them out, and turn the heat up to high.

You could also fold through
some cooked rice noodles and steamed Asian greens (like bok choy) for a gorgeous golden noodle bowl!
Cook rice noodles in boiling water 3 minutes.
You only have to turn your stove on for long enough to
cook the rice noodles, everything else is chopping and whisking.
Or, if you'd like to enjoy the Pho as a meal,
cook your rice noodles according to package directions and place them in serving bowls with your tofu / seitan and mung bean sprouts.
This is like déjà vu... same ingredients but peeled and chopped a bit finer... More veg and you have a thicker soup... simmer until the veg is cooked... add
the cooked rice noodles, and some shredded chicken... warm all though... season to taste.....
