You want it to
cover the entire pan, but very thinly.
Add ghee or butter and allow it to melt; then swirl it around to
cover the entire pan.
Once the pan is hot, pour in the batter until
it covers the entire pan.
Pour batter into pan, patting out batter to
cover the entire pan.
The mixture should
cover the entire pan and be about 1,5 - 2 cm thick and really compact.
