Ok, I'll admit that I have been thinking of
making panna cotta for a long time, but you have to agree that it is a bit lack lustre compared to a layered cake or chocolate cookies.
I have always wanted to
try making Panna Cotta so when I saw buttermilk on the list of ingredients, I knew I was going to try a lighter panna cotta instead of a traditional one that is made with milk.
I have
n't made panna cotta with soy, rice or coconut milk, but I'd be interested in hearing from any who have tried any of them.

i made panna cotta but most recently I tried prechilling the mixture in an icebath to about 50 degrees F and it worked out great.
I made the panna cotta using heavy cream and it was delicious but did not compare with the Panna cotta at Lidia's in Pittsburgh... at the restaurant it is light and silky in texture... would half and half instead of heavy cream correct this?
