Try
making water kefir with freshly squeezed orange juice and a few raspberries; or lemon juice and a natural sweetener with mint; or lime juice and a natural sweetener with fresh ginger.
Note also that it is best to refrain from using 100 % juice when
making water kefir as you will end up with an alcoholic beverage!
I have been
making water kefir of sometime and never had my second fermentation have this floating stuff.
I filled our kitchen with vegetables, citrus fruits, the only redeeming thing about winter, and good meats (I've also
started making water kefir, that is another post).
I keep one jar with the grain fermenting on the counter at room temperature (70 - 78ºF) and another one with freshly
made water kefir in the fridge for drinking.
Place cranberries, kefir grains and half of the sugar in your fermenting jar (you can use whatever jar you
usually make water kefir in) and pour in enough water kefir to cover the berries.
To
make the water kefir carbonated, pour a couple ounces of fruit juice such as grape, pomegranate, apple, or cherry into the water kefir you just strained.
After making the water kefir with the instructions above through step 6, I remove the kefir grains and use them to create a new batch as described above.

I have been wanting to start fermenting for some time — and have had one unsuccessful attempt at
making water kefir so far.
If you don't like milk, then you can
also make water kefir, which is the same process, and you can use coconut water, or spring water and add berries to the end result.

Other adjustments were using coconut sugar instead of sucanat and adding chopped candied ginger that I had saved from
making water kefir.

making water kefir, I purchased 1/2 cup of hydrated kefir grains from an ebay store.
