This property allows them to react with both water and oil, which normally does
n't mix with water.
The starch in the
flour mixes with the water in the dough mixture to form a matrix which then sets leaving the holes left by the gas bubbles inside.
You typically would NOT need that much
paint mixed with water, unless you are applying the wash to literally the side of your house!
Before baking, you can brush the tops of the buns with an egg wash (
egg mixed with water) and sprinkle sesame seeds on top.
Turn heat on medium and whisk constantly to combine the
dry mix with water and to prevent sticking to the pot.
