I love using

I was recently listening to an episode of the Good Food podcast where a guest of Evan's
recommended soaking dates in vodka (filling a quart container with them, then pouring the vodka over the whole lot), then weeks later siphoning off the vodka as a cordial and cooking with the dates.
I used fresh pulp from this morning's almond milk,
soaked the dates as someone suggested, added a little almond flavoring, baked correct amount of time and while they have good flavor and are moist, they are hard to swallow.
You can cut down on the prep time by doing a bit of multi-tasking

A few suggestions... I
usually soak my dates, having pitted and chopped them first, but you can also soak them first, then remove the pits and cut them in halves or quarters after this (or just pull the pits out with your fingers).

no need for any milk or dairy; The frothiness is from the soaked almonds (no need to peel the skin off); naturally sweetened
with soaked dates, and spiced with calming fennel...
You don't need to
soak the dates for long as they quickly become waterlogged and make the dough too wet.
