Our family avoids most legumes because of the impact they can have on the gut and instead use natural nut butters made
from soaked nuts.
First things first, I highly
recommend soaking the nuts overnight (or for at least 4 hours) for both the chocolate mousse and the vanilla cream.
While I most often skip this step myself, note that
soaking nuts increases their nutritional value and makes them easier to digest.
If you're worried about taxing your food processor with this recipe, you might want to
try soaking the nuts for much longer than called for, maybe 8 - 12 hours even.

I bet they'd still work — since you have to
soak the nuts anyway to soften them, the salt should rinse right off!
So for the ease of this recipe (and because no one wants to stand around the
kitchen soaking nuts and seeds all day) I suggest you simply soak them all overnight.
I like
soaking the nuts at night, so when the sun rises, I can have a soothing glass of almond milk with breakfast.

I make the hazelnut cream just as I do regular nut milk,
soaking nuts overnight, blending with water and then straining out the pulp.
It's not the end of the world if you do
n't soak your nuts but why not get all the benefits instead of just some?
