toasting the quinoa flour gives it a softer more nutty flavor.
I would swap out some of the brown rice flour, and I would try
toasting the quinoa flour so it has a more mild flavor.
(note: for those of you who are sensitive to millet, substitute sorghum or
toasted quinoa flour)

For a little extra texture, flavour and protein, a bit of
toasted soy
flour and a hot «cereal» mix of
quinoa, amaranth, buckwheat and chia seeds were added to the basic
flour / yeast mixture, followed by extra crunch and sweetness from granola.
That said, if you're new to using
quinoa flour you may want to try
toasting the
flour ahead of time to help mellow the flavor a bit.
* To make your own
quinoa flour, either grind
quinoa flakes in a high speed blender or
toast and grind whole raw
quinoa.
I have found that with a gentle
toast, the flavors balance out and helps make
quinoa flour even more versatile.
Once the
quinoa is nicely
toasted, grind it in a spice grinder, blender or food processor, until you have a fine
flour.
To
toast in the oven, spread
quinoa flour evenly on cookie sheets and bake for about an hour at 225 degrees.
