First, I always
toast my
oats with butter and canola oil, no matter what recipe I'm making, using Ree Drummond's method from her recipe for granola bars
on The Pioneer Woman blog, this added 2T butter and 1 / 8c of oil.
Before you do anything else, spread the
oats and walnuts out
on a rimmed baking sheet and
toast them in a 350F oven for 5 - 7 minutes.
They are great as is,
on toast with almond butter, but I also love them over a bowl of

I love this jam spread
on pancakes or
toast, eaten by the spoonful with peanut butter, or spooned
on top of a bowl of porridge or overnight
oats.
Spread the
oats and nuts out in a single layer
on a large baking sheet until lightly
toasted, about 10 minutes.

If you still want a crumbly topping, you can use quick - cooking
oats (perhaps
toast them
on a dry skillet first for a nuttier flavor) or use any kind of nuts you have
on hand (if you'd like to use nuts at all, that is).
Quinoa might be something a little different, but you can't really improve
on classic crunchy
toasted oats, can you?

Spread

You need only turn
on your oven if you choose to
toast the
oats, nuts, and seeds (I did, and felt it was worth it, but feel completely free to skip this step).
As you may know, it's something I like to do at the beginning of the week to add to my smoothie bowls, overnight
oats, or
on toast for breakfast and snack time throughout the week.
Good choices include a poached egg
on wholegrain
toast with ricotta cheese / avocado, a handful of raw, unsalted nuts and seeds with a piece of fruit or yogurt with
oats.
