I never think to put grilled
tofu in my sandwiches, and that clearly needs to change!
I have yet to put baked
tofu in a sandwich, even though I've seen a bunch of different recipes for it.
Yeah, this was the first time I put baked
tofu in a sandwich, because usually when I'm making sandwiches I want something that cooks a little quicker.
You can use the prepared
tofu in a sandwich (in place of lunch meat), chopped up on a salad, served over some rice, or enjoy it on its own!

I prepared a vegetable and
tofu pâté that's often used
in vegetarian bánh mì
sandwiches.
Oh, the Vegan Mayo
in the book that's on this
sandwich is so delicious and diabolically simple that it's worth the purchase of the book alone: you'll have no more guilt over eating oil - laden store bought vegan mayo, but you'll also stop pretending that blocks of
tofu seasoned with lemon juice and pureed, or the non-fat vegan mayo versions taste anything like real mayo.
The flavour infused
in the
tofu by the quick, four ingredient marinade lends itself to all kinds of different types of food:
sandwiches, pitas, burritos, enchiladas, garden salads, grain salads, battered & fried, smothered
in gravy.
Method: Drain and chop the

tofu was a little off putting.
