For packed lunches I normally make big batches
of quinoa and brown rice with apple cider vinegar / lime and salt and then do a big thing
of roasted veg — things like sweet potato and squash cubes, so I throw a mix
of that into a tupperwear with some raw veg — things like avocado, grated carrot,
tomatoes and then some
hummus / lentils / chickpeas / seeds for protein.
To spruce up this spread, take your favorite olives or sundried
tomatoes — pictured are castelvetrano olives, Sicilian olives that are more delicious than anything in the world — and place on top
of your
hummus for garnish.
I had bites
of our other vegan
tomato bisque,
tomatoes with cilantro lime
hummus, curried chickpea salad, etc..
This was lots
of the same, greens, carrots,
tomato, tempeh, and a
hummus dressing (Sabra + Bragg's + water).

I love this idea
of adding roasted
tomatoes to
hummus!
I make it all the time even for breakfast when there's not much to put on a sandwich — a nice organic spelt bread with a spread
of hummus, spinach leaves and
tomato from the garden makes a perfect breakfast or lunch around here...
I highly recommend serving these falafel patties with
hummus, tzatziki, fresh vegetables like
tomatoes, cucumber and radish as well as a ton
of greens and herbs like fresh parsley, mint and lettuce.
It is filled with chopped lettuce, cucumber, and red onion, sun dried
tomatoes, chickpeas instead
of the
hummus sometimes served on sabich, roasted slices
of eggplant, hard boiled eggs, and arguably the best part - spiced and toasted strips
of pita.
If you can not find truffle
of any sort, don't like it or do not want to use it, flavor up this
hummus with 4 - 5 halves
of dried
tomatoes in olive oil, and use a tbsp

tomato oil instead
of the truffle oil.

tomato parsley mixture, a spoon

As serving recommendation, please try serving your
