Cooking up the fajita fillings in bulk makes it easy to throw on
top of a bed of greens as an easy lunch throughout the week.
Thaw and throw them on
top of a bed of greens with a little Dijon mustard, a slice of tomato, and avocado for a delicious healthy meal in minutes!
I recommend making this on Saturday or Sunday and then serving as a sandwich (Brian's preference) or on
top of a bed of greens and chopped veggies (my preference).
Once finished, turn off the heat, distribute 2 cups of baby greens to two bowls and add 1/2 the mushroom mixture on
top of each bed of greens.
You can eat this on a sandwich or wrap, with some crackers, or even just put a scoop on
top of a bed of greens.
As you may have noticed, I totally copied Chef Marcel's presentation, too: it makes for a far more interesting plate than just throwing the salad on

If I'm in a hurry, I like to season the eggs with garlic or onion powder, a dash of himalayan sea salt, any other spice blend I have on hand and just place them on
top of a bed of greens.
